Cheese Cupcake

一般想要活下去的时候就会激励自己去烤蛋糕, 但是没烤过的recipe的很多材料必须要新买, 不翻新花样又觉得很无趣, 所以找个愿意烤的新recipe让自己活着也不容易.
Anyway, 今天还是奋力找了一个, food network上的. 和之前想的cheese cupcake不同之处在于这个不是用cream cheese做的微型cheesecake, 而是用cheddar和velveeta cheese做ingredient的.

冰箱里有多…月前鬼迷心窍买的半块奶香异常浓郁的cheddar, 然而我连velveeta是什么cheese都不知道, 更不用说有存货了.
但家里既然有cheddar, 甚至正好有炼乳(sweetened condensed milk)这么奇异的材料, 说不得还是要勉力一试了.

Prep Time: 20 mins Total Time: 45 mins
Serves: 18, Yield: 18 cupcakes
1 3/4 cups flour, sifted
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter
1/2 cup granulated sugar
2 large eggs
1/2 teaspoon orange extract
8 ounces sweetened condensed milk
1/2 cup Velveeta cheese, shredded
1/2 cup cheddar cheese, shredded

Directions
In a large bowl, combine flour, baking powder and salt.
In a medium bowl, beat butter, sugar, eggs and extract.
Pour in flour mixture in thirds adding 1/2 can of sweetened condensed milk in between (beginning and ending with flour mixture.).
Add in grated Velveeta and blend well.
Put in muffin cups 3/4 cup full only.
Top with grated cheddar cheese.
Bake in 350 oven for 20-25 minutes.
Stays moist for 1 week in room temperature (covered in tight lid container)

我基本按2/3 scale的, 希望做出12个cupcake, 最终出了10个很胖的.

没有orange extract, 所以用了点lime juice(现在才意识到应该弄点Lemon zest添加的是flavor).
没有velveeta cheese (need 1/3 cup), 于是用了大致1/3块8oz的cream cheese和一些grated cheddar替代了. cream cheese没法shred, 于是就直接一块丢到融化的butter, 糖和鸡蛋等中间用mixer搅. 没有放的太软或搅的太smooth, 因为原recipe本来就是要shredded cheese么, 所以搅成那种有小颗粒或块状的就拉倒了.

其余基本还是比较严格照做的, 甚至筛了面粉!
当然糖比方子里放的还是要少, 但是最后出来依然灰常甜!不知道是不是后面炼乳不小心放多了点. 总之以后要再做一定要少放糖.

最后烤了20分钟出炉, 奶香四溢,觉得挺成功的. 鉴赏一下:

虽然看表面一度担心是否内心够松软moist, 但咬开了一看真是十分肥软, 莫非一不小心烤出了本质上类似的”轻乳酪蛋糕”?
